The Buffet Setup Guide

Catering buffet on white and black risers with the words The Buffet Setup Guide, for catering and event displays.

Plinths New York (plinthsny.com) makes acrylic display risers for caterers, event stylists, hotels and venues. This guide puts our buffet setup articles in one place: why height matters, how to lay out the table, how many risers you need, chafing stations, and setups for weddings, hotel breakfasts and live stations. The shop links below go straight to the collections.

Start with height

A flat buffet hides most of its dishes. Three height zones fix that: low pieces of 0 to 4 inches at the front, medium risers of 5 to 11 inches in the middle, and plinths of 12 to 18 inches at the back. Guests slow down, see more dishes and move through the table the way you planned. Read how to create height on a buffet table and how to build a tiered buffet display.

Set up in a fixed order

Linen first, then the tallest pieces, then mid-height risers, chafing frames, empty platters and signage. Food goes on last. Setting the heights before the food means you can adjust the layout without moving full dishes. How to set up a professional catering buffet display walks through it with an equipment list, and how to set up a buffet display that holds up covers keeping it looking finished through service.

Plan the hot stations

A 6-foot table fits three full-size rectangular chafing dishes; an 8-foot table fits four rectangular or five round. Keep chafers on the table in their own frames and use risers around them for cold dishes. Fill each water pan with 1 to 2 inches of hot water and fit the guard before you light the fuel. A magnetic acrylic guard covers the wire frame and shields the flame from wind, so food holds its temperature through service. See chafing dish setups for buffets and round chafing dish display ideas.

Setups for different services

Daily service and one-off events need different things from the same display. A hotel breakfast runs every morning, so its display has to hold up to daily commercial service, while a live station puts the chef and the cooking in front of guests. Read the hotel breakfast buffet playbook, action and live station ideas, buffet setup for the busiest weeks of the year, and the wedding dessert table guide.

Questions

Why use risers on a buffet table?

Risers give one table several heights. Dishes at the back sit higher than dishes at the front, so guests see the whole spread from the start of the line, and you fit more dishes on the same table.

How many risers do I need for my event?

It depends on your guest count and how many dishes you serve. Our guide on how many display risers you need works through it by guest count.

Should I choose acrylic, glass or wood risers?

Our acrylic risers are food-safe, lightweight and stackable for transport. Our comparison guide sets acrylic, glass and wood side by side for catering use.

Do your risers come with a warranty?

Yes. Our riser sets carry a 3-year professional warranty when you register within 30 days of purchase.

Is shipping free?

Orders over $1,000 ship free to the 48 contiguous United States. Below that, shipping is calculated at checkout. Alaska, Hawaii and U.S. territories are not eligible for free shipping.
