A 6-foot table fits three full-size rectangular chafing dishes, and an 8-foot table fits four rectangular or five round ones. For a corporate buffet, leave room at the ends for plates, cutlery and signage, and set cold dishes on risers beside the chafers so the line stays easy to read. Round chafing dish layouts.
Work in a fixed order: linen first, then backdrop pieces, tall risers, mid-height risers, chafing dish frames with wind guards, empty platters, then signage and menu cards. Food goes on last, and hot food last of all. Setting the height plan before the food lets you adjust the layout without moving full dishes. The full buffet setup order.
A full-size 15-piece set such as the White Range or Black Range covers 100+ guests. The 20-piece Black & White Array covers 125+ guests, and the 30-piece Black & White Range covers 200+. For an event with several food stations, plan three to five risers per station and choose the set that covers the total.
Match the color to the time of day. White suits daytime corporate catering and bright food. Black anchors evening events, galas and corporate dinners, and suits richly colored food. Gold or silver mirrored pieces add a metallic accent at black-tie events. The same white set used at a noon luncheon reads wrong at an 8pm gala.
